Ingredients:
Coconut oil, Sea salt, freshly ground black pepper, shallot, fresh ginger, garlic, red chilli, carrot, garam masala, brown sugar, baby spinach spinach, coconut milk, aubergine, fresh coriander
How it's made:
I fry the chilli paste in hot coconut oil, then add spices, cook for a couple of minutes then add sugar, coconut milk, and vegetables. This all gets gently simmered before adding chopped coriander
To prepare:
Leave lid on and heat in a pre heated oven @ 180 degrees C for 20 - 25 minutes
