How it's made:

I gently sweat shallots and garlic in olive oil until soft. Then i add chopped courgettes and vegetable stock, simmer gently, season and add a generous amount of fresh mint leaves then blend until smooth.

To prepare:

Transfer to a pan and heat gently on the hob. Drizzle with extra virgin olive oil and serve with warm crusty bread.
