Ingredients:

Carrots, shallots, garlic, celery, thyme, leeks, bay leaf, extra virgin olive oil, vegetable stock, sea salt, freshly ground black pepper

How it's made:

I gently cook carrots, onions, celery, leeks and thyme in olive oil until soft. then add puy lentils, vegetable stock and seasoning and simmer gently until lentils are cooked.

To prepare:

Transfer to a pan and heat on hob over a medium heat until hot.
