Extra virgin olive oil, garlic, chopped tomatoes, dried oregano, aubergine, chilli flakes, sea salt

How it's made:

I gently fry garlic in olive oil then add chopped tomatoes, dried oregano and cooked aubergine then simmer gently until thickened.

Serving suggestion:

Stir through cooked pasta and serve with parmesan
