Ingredients:
Extra virgin olive oil, shallots, thyme, bay leaf, carrots, celery, garlic, beef mince, tomato puree, red wine, beef stock, sweet potatoes, butter, sea salt, freshly ground black pepper
How it's made:
I gently cook shallots, thyme, carrots, celery and garlic in olive oil until soft, then I add the beef mince, turn up the heat and brown before adding red wine which is reduced, then tomato puree, stock and seasoning before cooking until nice and rich. Then I top with sweet potato mash and its ready for the oven.
To prepare:
Remove lid and heat in a pre heated oven @ 180 degrees C for 25 - 30 minutes.
