Ingredients:
Extra virgin olive oil, shallots, celery, carrots, garlic, leeks, thyme, bay leaf, plain flour, red wine, beef stock, diced lamb, sea salt, freshly ground black pepper, potatoes, butter.
How it's made:
I sear the diced lamb until browned, then remove from pan and add the root vegetables which I cook until soft. Then I add a good amount of red wine and reduce before adding the stock, tomato puree lamb and seasoning. Then it goes in the oven until soft and unctuous. Finally I add the sliced potatoes with a brush of melted butter.
To prepare:
Remove lid and heat in a pre heated oven @ 180 degrees C for 25 - 30 minutes.
