How its made: I marinate the chicken in garlic, lemon and oregano then simmer gently in a tomato based sauce with black olives and grilled red peppers.

To cook: Leave lid on and heat in a pre heated oven @ 190 degrees C for 20-25 minutes. Great with some rosemary roasted new potatoes.
